Pimientos de Padrón is small, around 2 inches long, with bright green colour and amazingly tasty peppers traditionally grown in Padrón, Galicia in northwestern Spain. This region is well known for its flourishing landscape, cool weather and mild temperature that provide the ideal growing conditions for these Padrón peppers.
We enjoy eating Parón peppers as tapas, and it's the easiest recipe to prepare. Simply fried in a pan and sizzled in olive oil, cook until the skin starts to soften and the pepper begins to collapse. then sprinkled with flaky salt.
What makes Parón peppers distinctive from others is you never know when you will bite into a spicy one till you pick one randomly. That's why in Spanish we say "unos pican y otros no" translation is "some are hot and some are not."
