Out of the nearly 300 types and varieties of Spanish olives, there are 4 main varietals that stand out - Manzanilla, Gordal, Hojiblanca and Cacereña.
Manzanilla - These are the traditional, classic style Spanish olive. They're tangy, nutty, and smooth and are the perfect snack.
Gordal - These are much larger olives, and they are the ones to use if you want to make a great stuffed olive side dish or appetizer.
Hojiblanca - The olive of choice if you're looking for something spicy and sharp to use in a dish or marinade.
Cacereña - Not a major olive fan? The Cacereña is a great 'starter olive'. It's a much milder taste, with nutty and fruity notes that make it perfect for use in most dishes.
