About Spanish Premium Beef

The Rubia Gallega (Spanish Blonde cow breed) is used for dairy and meat yield and can live up to 18 years. They have great amounts of intramuscular fat, making them unique and extremely popular.

They live in large expanses of land of unique beauty, filled with holm oak, cork oak, and other species of forests, along with pastures, scrubs, and aromatic herbs. Cattle stay in a healthy and wide environment, complying with the regulations of 1 head of cattle per hectare. Quality and animal welfare are ensured by keeping the animals in a rural environment. All resources are used for feeding beef as well as fighting bulls, creating a sustainable management model.

To achieve the same tenderness in all cuts, we leave our carcasses to rest in our temperature- and humidity-controlled dry-aging rooms for a minimum of 12 days. The premium cuts, however, are dry-aged for 45-60 days to enhance their exceptional flavor and tenderness.
