SERVING RECOMMENDATION
Ideal for roasting or quick-cooking as steaks.

Let meat come to room temperature before cooking

Pat dry and season with salt, pepper, and olive oil
For whole roast:

Sear all sides in a hot pan to develop a crust

Roast at 160°C (320°F) for 30–40 minutes, until internal temperature reaches 60–63°C (140–145°F)

Rest for 5–10 minutes before slicing
For steaks:

Slice into thick pieces

Pan-sear or grill over high heat for 3 minutes per side, until nicely browned and just pink in the center
