First defrost the beef in the refrigerator 24-48 hours before, and then bring the meat to room temperature by leaving it out of the refrigerator for approximately 2 hours before cooking. Once it reaches room temperature, it can be prepared to your desired doneness, but we highly recommend to cook rare or medium rare. After cooking, sprinkle the meat with "Maldon" salt and allow it to rest for a few minutes. Then, gently clean off any excess salt. This method ensures that the meat absorbs the perfect amount of salt, enhancing its flavors.
