Its flavor is a marine explosion with an intense aroma of coral that perfectly blends the sweet nuances that reside in its head and the concentrated iodine and salt provided by the environment in which it lives.
Revered in Spain, it has a very characteristic shape with violet tones of the roe on the head and red stripes along the body.
STORAGE & CARE
Keep frozen.
Defrost in the refrigerator. Wash the product well and cook thoroughly before consumption.
Do not refreeze once defrosted.
SERVING RECOMMENDATION
It is usually prepared cooked, grilled, or in "paella", and is currently the most demanded by Spanish haute cuisine chefs.
This delicacy is best served grilled, and slightly cooked in the oven or in the pan.
