Made from cow's milk, paste with a semi-hard, semi-elastic, and thick texture, white to yellow in color, smooth when cut, with a distinctive taste and flavor, few rounded or irregular eyes, vary in size, less than half a pea.

Its taste is superb, with a distinct hint of smoke.

The "San Simón da Costa" cheese has been created for a long time using the greatest raw materials, Galician ones, and a lot of artisanal care, a renowned and awarded delicacy on par with the best national cheeses. The Celts are credited with inventing this product, yet the earliest mention of it dates back to Roman times. Its key distinguishing feature is that it is smoked using birch wood.

These methods give it a mild taste with a character that is unique to this cheese. The manufacture of cheese with the Protected Designation of Origin "SAN SIMON DA COSTA"

STORAGE & CARE

To preserve this cheese properly, the temperature should be between 5 and 8 degrees, which is the lower part of the refrigerator.

SERVING RECOMMENDATION

This cow's cheese is perfect to serve on a board with other cheeses and some Obando Gourmet Rustic Picos. You can also use it as a tapa together with other Iberico Charcuterie products or Spanish Olives.
