    • Keep frozen at -18°C (0°F)

    • Do not refreeze once thawed

    • Best consumed within 6 months of purchase

    • Once thawed, keep refrigerated and cook within 24–48 hours


    SERVING RECOMMENDATION

    This striking cut is best cooked like a premium steak.

    • Season generously with salt and pepper

    • Sear on high heat for 3–4 minutes per side, until golden brown and medium-rare inside

    • Alternatively, reverse-sear by cooking low and slow (in a smoker or oven), then finishing on high heat for a caramelized crust

    • Rest under foil for 5 minutes before serving

    Serve with roasted root vegetables, aioli, or a Spanish red wine for a bold and elegant meal.
