From a sensory point of view, the raw material meets a series of requirements: has a more orange color with a sweeter flavor (a characteristic shared with the rest of the Rías Baixas seafood) and a peculiar fresh smell. The covering liquid for this conserve only has water and salt "made to measure", not filled by overflow but with the exact grams.
