    With minimal fat and maximum tenderness, it’s ideal for searing, roasting, or slicing into medallions for tapas or quick weeknight meals.


    STORAGE & CARE

    • Keep frozen at -18°C (0°F)

    • Do not refreeze once thawed

    • Best consumed within 6 months of purchase

    • Once thawed, keep refrigerated and cook within 24–48 hours


    SERVING RECOMMENDATION

    Naturally tender and quick to cook, this cut shines with simple preparation.

    • Let meat come to room temperature before cooking

    • Pat dry and season with salt, pepper, and olive oil

    For medallions:

    • Slice into 2–3 cm thick pieces

    • Pan-sear over medium-high heat for 2–3 minutes per side, until golden brown and just pink in the center

    For whole tenderloin:

    • Roast in a preheated oven at 180°C (350°F) for 15–20 minutes, or until internal temp reaches 60–63°C

    • Let rest 5–10 minutes before slicing against the grain

    Serve with roasted vegetables, apple compote, or a drizzle of sherry vinegar glaze for a refined yet rustic dish.
