    Sourced from Spain’s esteemed Ibérico pigs, this boneless Lomo Ibérico (pork loin) is a lean yet tender cut taken from along the pig’s dorsal rib cage. Known for its fine grain, subtle marbling, and naturally rich flavor, it is a prized ingredient in Spanish cuisine.

    Ideal for roasting whole or slicing into medallions, it delivers a beautifully juicy texture and deep umami notes. Whether pan-seared, grilled, or featured in tapas, this cut elevates every dish with authentic Iberian character.


    STORAGE & CARE

    • Keep frozen at -18°C (0°F)

    • Do not refreeze once thawed

    • Best consumed within 6 months of purchase

    • Once thawed, keep refrigerated and cook within 24–48 hours


    SERVING RECOMMENDATION

    Versatile and easy to prepare:

    • For medallions: Slice into thick pieces, season with salt, pepper, and olive oil. Pan-sear over medium-high heat for 2–3 minutes per side until golden and just pink inside.

    • For whole roast: Preheat oven to 180°C (350°F). Roast for 15–20 minutes, or until internal temp reaches 60–63°C. Let rest 5–10 minutes before slicing against the grain.

    Pair with roasted vegetables, a splash of EVOO, or a bold Spanish red for a full Iberian experience.
