Medium sized, round Spanish green pitted Manzanilla olives have a good proportion of flesh to stone and have a mild, gently bitter flavour which harmonises well with the spicy marinade, which gets its heat from chopped pieces of pickled guindilla chillies.

Once opened, keep refrigerated in a non-metallic container, covered in the brine and consume within 7 days.
The Manzanilla olive, a quintessential Spanish olive, is the most widely eaten table olive in Spain and fantastic with a martini. Enjoy them as part of a snack with Ibérico ham and some Spanish Cheese. The slightly spicy olives also make a great addition to salads.
