These sardineshave the peculiarityof their fishing method. Theyare captured using theXeitotechnique, a traditional technique that consists of a net cloth, which the boat drifts loose and captures those sardines as they pass through the net. Theseare hooked by thehead, thus preventing the product from being bruised and the raw material from being damaged as happens with other fishing methods. This sardineis offeredat the fish market early in the morning and that same day the productis manufacturedfresh. These sardinesare cleanedand gutted manually and steam roasted toachievethe desired texture. Theyare packedone by one and covered with extra virgin olive oil until overflowing.
