Anchovy and white anchovy : Tasty pintxos and tapas
ANCHOVY VS BOQUERONAnchovies and white anchovies belong to the same species of fish, Engraulis encrasicolus, also known as "bocarte" or "bokarta" on the Cantabrian coast. However, these two terms are not used in the same way. While "bocarte" is used to refer to the Cantabrian anchovy captured or consumed fresh, the term anchovy refers to its preparation in salt and boquéron when it is made with vinegar. Anchoa: it is called like that when they have spent a few months in salting, taking on that characteristic brown color. Then they are cleaned one by one and kept in oil. Boqueron: this term is used when, as soon as you fish them, they are introduced into a vinaigrette that gives the loins that characteristic whitish color. Anchovy and white anchovy are, therefore, the same fish and what differentiates them is the method of elaboration.Let´s get some traditional pintxos and tapas made with anchovies and boquerones.
Basque pintxo was first created over 60 years ago in the Bar Casa Vallés. The pintxo was named after Rita Hayworth’s character in the movie ‘Gilda’ because it is considered ‘verde, salado y picante’ (green, salty and spicy). How to prepare it Just cut into pieces the Guindilla pepper and put it together with olive and the anchovy. Add some olive oil on top. Enjoy! Feel its mild, slightly picked flavor in your palate.

BOQUERONES WITH SALMOREJOFor the salmorejo you will need to put into a food processor some ripe tomatoes, cubes of white bread, garlic, salt, and a splash of vinegar. Once is done you just need to add some in a plate and add the boquerones on top
