    Presa de Cerdo Ibérico is a thick, boneless shoulder steak located between the shoulder blade and the loin. Prized for its perfect ratio of lean meat to marbling, this cut stays incredibly juicy whether grilled whole, served rare like a steak, or sliced thinly. Naturally tender and rich in flavor, it's a go-to among chefs for effortless, full-bodied results.


    STORAGE & CARE

    • Keep frozen at -18°C (0°F)

    • Do not refreeze once thawed

    • Best consumed within 6 months of purchase

    • Once thawed, keep refrigerated and cook within 24–48 hours


    SERVING RECOMMENDATION
    A steak-like cut with rich marbling, Presa is best enjoyed medium-rare and simply prepared.

    • Bring meat to room temperature before cooking

    • Season lightly with salt and pepper

    • Sear both sides in a hot pan for 3–4 minutes

    • Transfer to a 180°C (350°F) oven and roast for 8–10 minutes to medium-rare

    • Rest 10 minutes, then slice thinly across the grain

    • Serve with seasonal vegetables, piquillo peppers, or a touch of smoked salt
