Simple preparation:

1. Season the insides with salt
2. Place on wooden sticks in roasting tray with water
3. Cook skin-down at 180°C for 1.5 hours
4. Flip and cook skin-up for 1.5 hours
5. Serve gravy separately to maintain crispy skin
