This crustacean grows in the mouth of the Guadalquivir River, in the region of Sanlucar
de Barrameda in Cadiz, on whose shores is found the largest Ecologic Reserve in Europe, Donana National Park.
The langostinos of Sanlucar de Barrameda is famous the World over. Bathed in a mix of fresh water from the Guadalquivir and the salty currents of the Atlantic, it is renowned for its uniquely firm texture and sweet flavor. Gently harvested using traditional methods ( trammel) that have been used for centuries, the langostinos are live-caught, ensuring freshness and high quality.
How to boil seafood:
- 500grams/1lb of fresh seafood
-200g grams/1/4 pound of course grained sea salt
-Plenty of ice
1. Place into a casserole a large amount of water, on medium heat
2. In another casserole, mix the grained sea salt, water and ice.
2. When the water in the first casserole starts to boil, add the sea food,
making sure that they are completely covered by water.
4. Bring the water back to a boil, about two minutes, and then pull
the seafood out of the hot water and plunge them into the ice cold and
salt water. Submerge them in the cold salt water bath until they are
chilled and have soaked up some of the SALT. About 5 minutes.

The Sanlucar Tiger Prawn (Penaeus kerathurus) is a well-known gastronomic treasure of the Andalusian Atlantic coast. This species primarily breeds at the mouth of the Guadalquivir River. The Doñana National Park is located between the provinces of Huelva and Cádiz.
It is a crustacean from the same family as the prawn, and thus has a similar appearance. Its unmistakable feature is the colors that it displays on its body: whitish horizontal bands alternate with others of an almost reddish orange colour. Its normal size ranges from 8 to 16 cm, but it can grow to be as long as 25 cm.
But it's their nutrition that sets them apart from prawns from other fishing grounds, such as Tunisia or Morocco. Because of the distinct characteristics of the water in which it grows, it has a distinct diversity. An area is adjacent to the Doñana National Park is known for having one of the highest levels of biological diversity in Europe, if not the world.
All of this is supplemented by the most traditional and sustainable fishing gear. These characteristics give the Sanlucar Tiger Prawn a distinct flavour. A much stronger flavour than fish from other areas.
