Payoyo Goat Cheese
Payoyo is a type of cheese made from the milk of Payoya goats and Merina grazalemeña sheep in Villaluenga del Rosario and other areas of the Sierra de Grazalema, Spain. Queso Payoyo marries these two cherished characters of the dairy world to create a cheese so flavorful, balanced and fragrant it is utterly addictive.
This semi-hard goats' milk cheese has fresh floral and herbaceous notes, a gentle acidity, hints of nuts, and a long, clean finish.
