Back legs of an Ibérico pig, obtained from adult Ibérico pigs with 100% of genetic percentage. Sacrificed immediately after exclusive feeding of acorns, grass and other natural resources of the pasture without the addition of supplementary feed. Slaughtered with at least 20 months of age, minimum carcass weight of 150 Kg and subjected to salting and dry-curing processes.
